Healthy eating made easier: 'Dietitian's Kitchen' featured at commissary

More nutritious choices are being offered for those health-conscious eaters out there. The Health and Wellness Center's registered dietitian recently debuted "Dietitian's Kitchen" at the commissary here. 

Dietitian's Kitchen is located in the produce section at the commissary. It features a new, healthy recipe every two weeks. The recipe is featured on note cards and all the ingredients are in one spot, making it convenient for customers. 

"I started Dietitian's Kitchen because people are always looking for quick, healthy meals they can prepare at home," said Dana Maurer, HAWC registered dietitian. "I always get the question, 'What do you eat for dinner?' These meals have been prepared in my kitchen at some time." 

The recipe note cards also list all the nutrients found in the meal, along with caloric information and serving sizes. 

"People who are looking for nutritious meals that are simple and easy should check out Dietitian's Kitchen," she said. "When you want to eat well and you have limited time, just grab the recipe, ingredients, and go!"

Dietitian's Kitchen featured recipe: Cajun-turkey cheeseburgers
 
Ingredients:
Vegetable-oil cooking spray
½ each red, yellow and green bell peppers, cored, seeded and cut into strips
1 lb lean ground turkey
1 tsp Old Bay or other meat seasoning
¼ tsp ground cayenne pepper
¼ tsp salt
4 slices low-fat pepper jack cheese
4 light whole-wheat hamburger rolls 

Preheat grill, indoor grill pan or heavy frying pan to medium high. Coat a medium-sized pan with cooking spray. Sauté bell peppers 20 minutes over medium-low heat. 

Combine turkey with Old Bay seasoning, cayenne pepper and salt in a medium-sized bowl. Form into four patties. Grill patties four minutes on each side or until juices run clear. Remove from heat, and top each burger with a slice of cheese. Place each burger on a roll; top with sautéed peppers. 

Nutrition information: 385 calories, 12.5g fat (2.2g saturated fat), 32g carbohydrates, 34g protein, 5.8g fiber.
